Several easy to prepare vegetarian gravy recipes.

Clear Gravy

1 teaspoonful of Marmite dissolved in half a pint of hot mineral water.

Tomato Gravy

1 teaspoonful of gravy essence, 1 small tablespoonful of tomato purée, half a pint of fresh mountain spring water. Thicken with flour if desired.

Spinach Gravy

1 lb. spinach, 1 dessert spoonful of nut-milk, half a pint of mineral water.

Boil spinach in its own juices in a double boiler; strain all the liquid from the spinach and add it to the nut-milk which has been dissolved in the mineral water.

Parsley Sauce

1 oz. chopped parsley, 1 tablespoonful of virgin olive oil, a little flour to thicken, half a pint of mineral water.

Pea, Bean, and Lentil Sauces

1 teaspoonful pea-flour, or bean-flour, or lentil-flour; half a teaspoonful gravy essence, half a pint of mineral water.

Mix flour into paste with the water, dissolve the essence, and bring to the boil.
