Gochujang Recipe (Korean Chilli Paste) Stew

Serves 1. This gochujang recipe is focussed on Chilli, Mushroom, Soy product, Garlic, Seaweed, Rice, vegetables and Seafood. The meal is low in meat, fat, sugar and salt so is healthy as well as tastey.

The Gochujang in this recipe is a hot bean paste made from hot pepper, corn syrup water and wheat flower.

Ingredients

  • 4 x Chinese leaves - slice into 1.5-2cm strips.
  • 150g Bean sprout.
  • 50g Shitake mushroom or any other mushroom - sliced.
  • 1/2 Onion - sliced.
  • 4g (1 table spoon) Dried, chopped Wakame sea weed.
  • Gochujang
  • Dark Soy sauce.
  • Stock cube or powder (vegetable, chicken or fish).
  • 1 clove of garlic (whole, sliced, grated - it's up to you).

Recipe

  1. Bring 500ml water to the boil.
  2. Add a pinch of stock cube or powder of your choice.
  3. Add all the vegetables and garlic to the pan.
  4. Cook for 5 minutes or until the vegetables become tender.
  5. Add 5ml (1tsp) os Soy sauce and around 15ml (1tsp) of Gochujang according to your taste.
  6. Serve.

Tips

If you like a strong garlic flavour then grate the garlic clove. Alternatively, if you prefer a mild garlic flavour, cut it in half.Any vegetables may be used, but some vegetables will take longer to cook than others.Any strip of meat, fish or tofu may be used in this recipe.
