Soy and Cream Mushroom Spaghetti Recipe

This spaghetti recipe serves 1.

Ingredients

  • 90g Dried spaghetti.
  • 150g Enoki mushroom - remove the bottom and divide into a manageable size.
  • 150g Shimeji or Oyster mushroom - slice.
  • 1 clove of garlic - sliced.
  • 5ml (1tsp) Dark soy sauce.
  • 5ml (1tsp) Single or Double cream (your choice).
  • 5ml (1tsp) Olive oil.
  • Salt and pepper.
  • Chopped parsley.

Recipe

  1. Boil the spaghetti in a large pan with salt (1L water with 10g salt).
  2. Meanwhile, into a medium heat frying pan, add olive oil and cook the garlic.
  3. Cook the mushroom for 1 minute but do not over-cook.
  4. Add soy sauce, a pinch of salt and freshly ground pepper.
  5. Drain the spaghetti well and add to the pan.
  6. Stir well, add cream and stir again.
  7. Transfer to the plate, sprinkle chopped parsley and serve.

Tips

Vary the amount of salt and pepper according to your taste. Add a strip of bacon if you like. When you use bacon, reduce the amount of salt and soy sauce. Any type os pasta may be used.
