Simple Vegetable Curry Recipe
This vegetable curry recipe serves 2 people and is suitable for vegetarians or as part of a weight loss diet.
Ingredients
- 1/2 an onion, chooped or sliced.
- 1/2 a carrot chopped.
- 1/2 a celery stick.
- 1/2 a courgette.
- 1/4 of a brocolli bunch. Cut into manageble pieces.
- 600ml vegetable stock.
- 10ml tomato puree.
- 30ml butter or margarine.
- 30ml curry powder.
- Cornflower.
- Chilli powder.
- Cumin.
- Corriander.
- Salt
Recipe
- Make Curry Butter. Put butter in a small ramekin, melt by microwave
oven, mix in curry powder.
- Bring stock to boil, add carrot, celery and onion. Simmer for 5 minutes.
Add courgette and cook until all the vegetables become tender. Finally, add
brocolli.
- Add tomato puree, then curry butter according to your taste.
- Season with salt.
- Add chilli powder, cumin or corriander according to your taste.
- Thicken with cornflower paste (cournflower mixed with water).
Tips
Any vegetables may be used. Start cooking hard vegetables first (such as
carrot or potato). You can add cream or coconut milk at the end. Serve with
rice or noodles of your choice.
